At “Sushi Yutaka,” a sushi restaurant in Miyagi Prefecture that focuses on local ingredients, all eggs used are cage-free.
The restaurant has pledged to continue using only free-range eggs in the future and has become the first sushi establishment to support our organization’s cage-free declaration.
Committed to local ingredients, the restaurant uses free-range eggs from Ishinomaki City in Miyagi Prefecture.
We will continue to support “Sushi Yutaka” as they maintain their chicken-friendly choices.

What Is Cage Farming?

Cage farming is one method of raising egg-laying hens, where chickens are kept in wire cages. In Japan, over 90% of egg-laying hens are raised using this method. In most cases, each hen has only 350–450 cm² of space—smaller than a single B5 sheet of paper—so confined that they cannot even spread their wings.
This restriction of movement leads to health problems such as bone fractures, and cases resulting in death have been reported.

In contrast, free-range farming allows chickens to move around on the ground, enabling more natural behaviors.
